Kitchen Manager/Sous Chef/주방장;
주요업무 및 자격조건:
주방 및 백오피스 운영을 담당하여 음식의 사양이나 요청에 따라 안전하고 효율적으로 준비되어야 합니다.
주방의 관련된 모든 건강, 안전, 위생 규정 및 표준에 따라 운영되도록 보장되어야합니다.
식재료 재고, 주문 및 구매를 감독하여 필요한 식재료를 최대한 신선하게 관리하고, 부패와 낭비를 최소화 할줄 알아야 합니다.
주방 장비 및 기구를 유지 관리 및 검사하고 필요에 따라 수리 또는 교체를 권장할수있어야 합니다.
수석 셰프와 협력하여 음식 및 인건비 관리를 시행하고, 효율적인 운영을 위해 지속적으로 모니터링하며, 예산과 차이가 있는 경우 수석 셰프 또는 General Manager 에게 보고하여 수익성을 극대화 할줄 알아야합니다.
수석 셰프와 함께 레시피 비용을 정기적으로 확인하여 수익 목표를 달성해야 합니다.
매일 보건부 규정에 맞춰 위생 점검을 하고, 규정 위반 사항을 즉시 해결해야 합니다.
Back of House 직원의 급여를 검토 및 승인하고, 매일 출퇴근 스케줄을 관리하며 코칭을 해야합니다.
커뮤니티 행사에 참여하고 기업의 사회적 책임 목표가 달성될 수 있도록 도와야합니다.

Duties & Essential Functions:
Oversees the operations of the kitchen and back-of-house, ensuring that food is prepared safely, efficiently, and according to specifications or request.
Ensures kitchen runs in accordance with all applicable health, safety, and hygiene codes and standards.
Works with the Executive Chef to create and modify the restaurant's menu based on food trends, food costs, patron requests, and seasonal availability.
Oversees stocking, ordering, and purchasing of ingredients, ensuring that necessary ingredients are available and as fresh as possible while also minimizing spoilage and waste.
Maintains and inspects kitchen equipment and utensils, recommending repairs or replacements as needed.
Maximizes profitability of the culinary department by working with the Executive Chef by implementing effective food and labor cost controls, consistently monitoring budget to ensure efficient operations, reporting any discrepancies from budget to the Executive Chef or GM.
Costs all recipes regularly to ensure profitability targets are achieved
Establishes line check procedures to ensure DEPARTMENT OF HEALTH compliance multiple times daily; Conduct line checks multiple times per day when on duty to ensure DOH compliance; Address all DOH violations immediately.
Reviews and approves payroll for Back of House staff; reviews daily time punches for accuracy; address time clock abuse (clocking in early or late) via coaching and/or documentation.
Participates in community events and helps to ensure corporate social responsibility goals of the company are met.

We are seeking to hire a dynamic and experienced servers to join our passionate hospitality team.

Requirements:
Provide enlightened service to every guest.
Previous hospitality experience preferred (~2 years).
Accurately take and enter orders and communicate flow with management and chefs.
Knowledge of POS (point of sales) systems.
Must be able to lift heavy boxes (at least 50 lbs).
Ability to walk, stand, and bend for extended periods of time
Occasional kneeling, bending, crouching, and climbing is required.
Available to work weekends, nights, and holidays as the business dictates.
Food safety certification + TIPS certifications
